Golden Harvest Pear Loaf
Whether it's a lazy Sunday morning or a cozy afternoon snack, this scrumptious Golden Harvest Pear Loaf is the ultimate companion. Perfect with a cup of tea, a dollop of whipped cream, or even just on its own, this loaf brings a comforting feeling that warms both the heart and the soul.
Ingredients:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup plain yogurt
1 cup fresh pear purée (made by blending 2-3 ripe pears)
For the pear purée:
2-3 ripe pears, peeled and chopped
1 tablespoon lemon juice
2 tablespoons water

Preheat your oven to 350 degrees Fahrenheit.
Grease and flour a 9x5-inch loaf pan.

In a medium bowl, whisk together the four, baking powder,
salt, cinnamon and nutmeg. Set aside.

In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

Add the flour mixture to the butter mixture alternately with the yogurt, beginning and ending with the flour mixture. Mix until just combined.

In a separate bowl, prepare the pear purée by combining the chopped pears, lemon juice, and water. Blend until smooth using a blender or food processor.

Fold the pear purée into the batter until evenly distributed.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
Remove the loaf from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
Once cooled, slice and serve the breakfast loaf with a dollop of pear purée on top. Enjoy!
